Default Can the PS3 output video over HDMI and audio over composite at the same time?

I would like to connect my PS3 to my TV via HDMI and have surround sound. Unfortunately, my receiver is a few years old, and I can't afford a new one - it doesn't have any HDMI hookups, only composite. I know for my 360 I can route the HDMI to the TV and run the composite cables to my receiver; can the same be done for the PS3?

Alright, so if I was to hook up the PS3 to the TV via HDMI (both video and audio), would I then be able to run the red and white RCA cables from the audio out on my TV to my receiver, would I still be able to get 5.1 sound?
