No you can't.

If you plug in a digital camera you can view the photos on it.

If you plug in an MP3 player you can play the music on it.

If you plug an MP3 player into a computer which is connected to the xbox 360 you can stream videos (with windows media connect or windows media center)

You can't transfer data on or off the xbox360 hard-drive without the special memory cards and wires (to prevent copying of promotional demos i believe)

I don't think you can transfer a video from your zen mp3. If you stick the video on a memory stick you'll be able to watch it and maybe transfer it over to the harddrive.
